Ingredients:

  • 4 salmon fillets, skin removed
  • 1 pound pasta of your choice
  • 2 cups cherry tomatoes, halved
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F.
  2. Cook the pasta according to the package instructions, then drain and set aside.
  3. In a large skillet, heat some oil over medium heat and cook the onion and garlic until the onion is translucent.
  4. Add the cherry tomatoes and cook for a few more minutes until they start to release their juices.
  5. Add the heavy cream and bring to a simmer, then add the salmon fillets and cook until they are cooked through and flake easily with a fork.
  6. Remove the salmon from the skillet and use a fork to break it into large pieces.
  7. In a large mixing bowl, combine the cooked pasta, salmon, cherry tomato mixture, and Parmesan cheese.
